Actually the origins of this term from its association together with dessert and with food must have come from Latin term “bona fama” which means something that has a good and nice reputation. To correlate it with this recipe’s name, then this dish must really be great for it to have that great reputation.

“Pommes Bonne Femme”

Ingredients:

6 pcs apples (cooking apples; Pink Lady)
3 tbsps butter; softened
3 tbsps sugar (brown)
1 tsp cinnamon
1/4 c raisins (opt.)
1/4 c heavy cream
Jelly (Red Currant)
Almonds; slivered & toasted

Instructions:

Apples should be washed and then cored but left whole. Use those corer gadgets but if you don’t have one then your paring knife can work quite well too. Just be sure to use it really carefully. Leave skins on your apples and don’t take off their peel because the peel will be the one to hold your apples as they cook inside your oven.

Put your apples side-by-side inside your baking pan/dish and set it aside. Inside a bowl, mix together raisins, cinnamon, sugar and butter then spoon this mixture right into your apples’ center where the apple core was.

Add in 2 tbsps of water into your baking pan/dish then bake inside your oven for about 1 hr. at around 400 deg. F or just ’til apples become soft. If you’re using the larger kinds of apples, they might take a bit longer to cook. When serving, just drizzle your heavy cream & any leftover sauce from your dish onto your apples then place a dollop of jelly then some of your toasted almonds on top.

Good news for all backyard brewing enthusiasts, brewing your own fresh apple alcoholic drink or cider is easy using the most available apple sap in your kitchen. Yes, you heard it right, you or anyone can now create your own cider through commercial apple juices that you buy from the supermarkets and groceries.

You don’t have to own a whole orchard of apples to brew hard apple drink or cider. Fresh apple that contains no preservatives serves as good substitute for newly squeezed apple extract. Don’t worry if you only have pasteurized apple extract. You just have to strain it before using to eliminate the yeasts from the sap to obtain better alcohol level of your apple extract.

These are the easy steps in making 5 gals. (Gallons) of dry apple alcoholic drink or cider which is slowly fermented:

1. Buy five gallons of apple juices. However, if you cannot find one 5-gallon of apple juice at the groceries so you just buy several tins of it and then just bring them together later on.

2. Put all the juices inside a fermentation level to prepare it for its first phase of fermentation.

3. Put adequate quantities of white wine yeast. You are also allowed to put dry yeast or you just prepare it first to initiate fermentation by abiding the directions given on its label. You don’t have to use campden tablets to purify the juice especially if you are using the pasteurized kind of apple juice.

4. Wait for few weeks to begin the actual fermentation.

5. Remove the fermented cider from the first container and put it in another fermentation container for its second phase of brewing. Make sure that the container is air tight.

6. Always store the brewing vessel inside a cool and dry place and allow the apple juices to continue with the fermentation process. You would observe that the fermentation process is completed when bubbles don’t appear anymore.

7. Put the fermented apple cider in another container or flask it for one month.

8. Allow the fermented apple cider to age or mature for at least six months or up to 1 year.

You would probably think that this is not the most efficient way to make your own apple alcoholic drink or cider. However, if you let other people taste your product, they will definitely like it. It will taste even better if you allow the fermented apple cider to age.

There’s nothing wrong with undergoing several testing and taste tests for your hard apple drink or cider because it will help you achieve the right taste after quite some time, just like what happened to the famous Boone’s Farm Wine.

It’s possible to produce clear hard apple drink or cider without using any clearing agent. Just allow the fermented cider inside the storage room for one month allowing the unwanted sap residues to stay at the bottom of your container.

Oven-baked Apple Goodness w/ Caramel Sauce

Ingredients:

4 pcs of apples for baking (big)
1/2 tsp of cinnamon
1/4 c of raisins
1/2 c of oats (uncooked)
1/8 tsp of nutmeg
2 tbsps of softened butter
1/2 c of caramel topping (sugar free)

Instructions:

Oven should be preheated to around 400 deg. F. Grease an 8 inch baking dish using some non stick spray. Apples should be washed well then the cores taken out. If necessary, slice a bit off an apple’s bottom so that the apple will sit up fine.

Inside a bowl, mix butter, raisins, oats, cinnamon and nutmeg together. Stuff this mix in your apples. Next, cover your pan using some foil then bake them inside your oven for about 45 to 50 mins. ’til apples become tender.

Take them out of your oven then drizzle the caramel on your apples then serve them while warm still.

Apple & Lemon Pudding

Ingredients:

3 pcs medium-sized apples for cooking; peels off & sliced
Vegetable spray (non stick)
1 c of flour
1/4 tsp of salt
1 tsp of baking powder
1/3 c of Splenda
1/3 c of butter (salt free)
1/2 tsp of lemon peels; grated
1/2 tsp of vanilla extract
1/2 c of milk (low fat)
1 pc egg

Instructions:

Oven should be preheated to around 375 deg. F. Grease your 8 inch square pan for baking using the non stick spray. Layer your slices of apples on your pan’s bottom then set this aside.

Inside a bowl, mix salt, baking powder & flour together. Make sure that you’re blending this mixture thoroughly then set this aside too.

In another bowl, mix lemon peels, Splenda, vanilla & butter together and using your electric hand held mixer, on medium settings, ’til everything is blended well. Add in egg then beat mixture until it gets fluffy. Next, add in flour mix alternating with milk but make sure that you end with your flour.

Take this mixture and spoon it over your apples then bake inside your oven for about 40 to 45 mins or ’til you insert a toothpick in its center and it will come out really clean. Best served while still warm and nice.

Apple Dapple Dumplings

Ingredients:

1/2 c of shortening
2 c of flour (self rising)
3/4 c of milk (low fat)
5 c of apples; chopped
1 c of Equal Sugar Lite
1 tsp of cinnamon

Instructions:

Oven should be preheated to around 375 deg. F. Cut your flour in your shortening like when you’re creating your pie crust then add in milk. Mix until you get dough-like consistency then roll it out to a rectangular shape.

Inside a bowl, mix apples, cinnamon and Equal then spread this mixture on the rolled out dough. After putting all the mix in, roll the dough like that of a jelly roll then cut dough in slices. Then, place your slices on your baking dish then drizzle syrup all over.

Bake inside your oven for 1 hr.

For making sauce: Just bring the ff ingredients to a boil: 1.5 c of water, 1 & 1/4 c of Splenda, 1/4 c of sugar and 2/3 c of butter.

Sugar
Nutmeg
4 pcs of egg
2 c of flour
3 tsps of baking powder (Calumet)
2 c of milk

Instructions:

Combine nutmeg and sugar; place inside the hollow of cored apples. Place apples on a baking dish, cover then bake inside the oven.

Beat egg yolks and add flour, Calumet, milk, salt and beaten egg whites. Mix thoroughly and pour onto apples then bake moderately for an hour.

Peeled apples; cored and sliced
1 tsp of cinnamon
1 Tbsp of flour; sifted
2 Tbsps of water
Butter
Pie paste
Ready-made pie crust

1/2 c of milk

Instructions:

Combine apples, eggs, sugar, butter, zests, juice, milk, and brandy; mix them well. Pour onto a pie plate (lined with paste). Place paste strip on its edges then bake for half an hour.
